Kid-Friendly Side Dish: Date Almond Rice

Are you a fan of sweet and salty? I most definitely am… and so are a lot of kids.

It’s the kind of thing where the sweet just needs a hint of salt to have that perfect satisfying bite. When I tell you about date almond rice, you might not be on board- but, you have to trust me on this one.

Date almond rice is a Mediteranean-inspired side dish that will have you wondering why it tastes so good. The secret is a mix of salty and sweet.

Dates are a source of antioxidants as well as having the ability to reduce blood pressure. I always keep them in my fridge for a little snack for the whole family.

This recipe is the perfect way to incorporate them into dinner meals as well.

Date Almond Rice

  • 2 Tablespoons avocado oil
  • 10 pitted dates (chopped
  • 1 ½ cup basmati rice
  • 2 cups vegetable or chicken broth
  • ½ cup almonds (chopped)
  • 2 Tablespoons butter

In a medium sauce pan, heat the avocado oil to medium high and toast the almonds for 1 minute, then add the dates for an additional 30 seconds.

Add the basmati rice and toast the mixture for another minute. Add your chicken or vegetable broth, cover and bring to a boil.

Reduce heat and simmer for 20 minutes or until all the liquid is absorbed.

Stir in the butter.
