Lunch Box Hack: Batch Bake and Freeze these Apple Muffins!

Lunchbox Hack: Batch cook and freeze these delicious apple muffins to add to the lunchbox each day!

As much as I’m loving playing in the sun with the kids these days, there’s no denying it… back-to-school is coming.

You know what my least favorite part of the school year is? Packing lunch every. single. day.

And this year I have two kids to pack for!

Which is why I’m absolutely LOVING this lunchbox hack idea from our contributor, Kristin.

She’s once again teaming up with our sponsor Juicy Juice to bring you guys a great way to easily get a nutritious goodie into your kids’ lunch each day.

Packing a healthy school lunch can be challenging, especially when I have three kids to get out the door.

I’m a working mom, so I don’t have endless time to spend on creating delectable lunches for my children to bring to school (and, let’s be real, I highly doubt stay-at-home moms do either!).

I also don’t want every item in their lunch to be a packaged or processed item, just to save time.

I’ve discovered that making muffins is an easy way to create a wholesome snack that I can grab quickly and toss in their lunch box.

Once every two weeks, I’ll make a double batch of muffins and freeze them.

The effort goes a long way.  My kids love homemade muffins in their lunches and it’s an easy way for me to sneak in wholesome ingredients.

These apple muffins are one of our favorites.  They are packed with chunks of real apples and moistened with apple juice.

I love to use Juicy Juice because it’s 100% juice, so I know exactly what’s going into the muffin.

Then, at the end, I top these muffins with a healthy granola topping to add a little bit of crunch.

Apple Muffin Recipe

Makes 12 servings

Ingredients:

  • 2 cups all-purpose flour
  • 1/2 cup sugar
  • 3 teaspoons baking powder
  • 1/2 teaspoon salt
  • 3/4 cup apple juice
  • 1/3 cup oil (I use avocado oil, but vegetable oil will also work)
  • 1 egg
  • 1 teaspoon cinnamon
  • 1 cup diced apple (approximately 1 medium apple)
  • 1/4 cup coconut oil (softened)
  • 1/4 cup brown sugar
  • 1/4 cup oatmeal

 

Directions:

Heat oven to 350 degrees F.  Line a muffin tin with baking cups.

In a medium bowl, combine flour, sugar, baking powder, cinnamon, and salt; mix well.

In a small bowl, combine apple juice, oil, and egg; blend well.

Add in the dry ingredients all at once; stir just until dry ingredients are moistened (batter will be lumpy.) Stir in chopped apples.

Mix coconut oil, brown sugar and oatmeal in a separate bowl until fully combined.

Fill cups 2/3 full with batter.  Top with oatmeal mixture.

Bake for 20 minutes or until toothpick inserted in center comes out clean.

Cool 1 minute before removing from pan. Serve warm.
