Good Idea: Protein-Powered Blender Muffins

What’s better than a batch of freshly made muffins?  Muffins that can be made in minutes in your blender.

Simply dump ingredients into your blender and mix.  Pour into the muffin tins and you’re done!  If only everything could be this easy. (To make it even more simple, check out this amazing non-stick and dishwasher safe silicon muffin tin.)

Blender muffins are the perfect after school snack or lunch time accompaniment.

The following recipe is made with Kodiak Cakes mix to add in some extra protein.  Feel free to substitute with an extra cup of flour if you don’t have it.

Berry Banana Blender Muffins

  • 1 cup Kodiak Cakes Mix
  • 1 cup white flour
  • 1 cup milk
  • 1 egg
  • 3/4 cup brown sugar
  • 3 Tablespoons oil
  • 2 medium size bananas (ripe)
  • 1 teaspoon cinnamon
  • 1 cup frozen berry mix (for topping)

Instructions:

Place the banana, milk and egg into the blender and blend until smooth. 

Add Kodiak mix, flour, sugar, oil and cinnamon.

Blend again until smooth. You may have to stop the mixer and stir a little with a spoon to make sure all the clumps sink to the bottom to be blended.

Pour into lined muffin tins and top with a handful of frozen berries.

Bake 18 minutes (or until done) at 350 degrees.

That’s it! It’s never a bad idea to make a double batch and freeze some for future breakfasts and lunchboxes too!
