Summer Snacking: Tangy Orange Tangerine Creamsicles

One of my favorite parts of summer is having more time to make homemade treats with the kids!

With all of the sports and after-school activities during the school year, I never seem to have any extra time to spend in the kitchen with my kids, so I love to do it as much as possible during the summer.

My littles absolutely love spending time with me pouring and mixing and I see it as a great time to connect. Plus, getting them comfortable in the kitchen is an important life skill.

Your kids are going to love cooling off with them in the back yard all summer long!

Creamsicles are one of those things that will always represent summer to me.  The tangy sweet popsicle melting down my hand reminds me of summers spent riding bikes and running through the sprinkler.

With the warm weather right around the corner, I wanted to perfect a homemade recipe for all those backyard play dates that are right around the corner.

I started with a base of Orange Tangerine Juicy Juice.  I love that it’s 100% juice with no added sugar or any type of artificial sweetener.

You just can’t go wrong with 100% juice. The flavor is amazing and I’m giving my kids 120% of their vitamin c for the day.  When a popsicle can do that it’s a win!

Orange Tangerine Juicy Juice Creamsicle

(makes 18 mini popsicles)

  • 2 cups orange tangerine Juicy Juice (divided)
  • 1 cup heavy cream
  • 2 Tablespoons of the sweetener of your choice (we opted for honey to keep things healthy)
  • 8 ounce can mandarin orange (drained)
  • zest of one orange

Directions:

Mix 1 cup juice with 1 cup heavy cream.

Drain the mandarin oranges.

With a pair of kitchen sheers, cut up the oranges into segments.  (I do this part in the can.)  Add the oranges to the cream mixture and stir to combine.

In a separate mixing cup, zest one orange into 1 cup juice.  Stir to combine.

Pour 2 spoonfuls of the cream mixture into the popsicle molds.  Freeze for approximately 30 minutes.

Tap on it lightly with your finger to make sure it has started to solidify.

Add the juice mixture and a popsicle stick.  This will create a festive layered look of cream and juice.

Try mixing it up and make some popsicles with cream first and some with the juice first or, if you’re in a rush, you can combine all the ingredients and make the popsicles without a layered effect.

If you really want to go all out at your next BBQ, serve on a platter garnished with fresh orange slices. The visual presentation mixed with the sweet smells will be sure to impress!
