Healthy Eats: Taking Avocado Toast Up a Notch

Have you heard of the ‘momiform’?  This is what we wear on the regular.

I’m talking favorite jeans with some version of a soft tee, a cardigan (in either navy or black) and a comfy leather shoe.  The momiform is our go-to outfit that we wear on the daily.

I actually love having things that I know work for me.  Yes, it’s predictable, but it’s easy and always looks great.  Let’s move that thought to lunch.

Avocado toast has the become the momiform of lunch.  It’s easy to smear some avocado on a piece of bread and call it a day.

While avocado toast is great, I want you to step up your game.  I want to introduce you to the grilled avocado sandwich.  It’s health meets comfort food.  It’s the grilled buttery crisp you love about grilled cheese with a healthy filling.

I like to pair my grilled avocado sandwich with a salad for lunch, but soup would also be great.  Try it out the next time you’re wondering what to eat for lunch.  You might even get your kids to love the grilled avocado sandwich.

Grilled Avocado Sandwich

  • 1/2 avocado
  • 2 pieces sourdough bread
  • sprinkle of garlic salt
  • pinch of red pepper flakes
  • squeeze of lemon
  • 1 tablespoon butter

Use a fork to smash the ripe avocado on to a piece of bread.

Sprinkle with garlic salt, red pepper flakes and add a very gentle squeeze of lemon.

Add the other piece of bread on top.  Spread half the butter on top.  Turn that side down to a hot griddle.  Spread the other half of the butter to the top.

Grill until golden brown on medium high heat.
