We’re reaching the end of summer season fruits and vegetables like corn, peaches and zucchini. So I feel I’d be remiss if I didn’t tell you about my favorite ways to serve fresh corn on the cob to my family.
Don’t get me wrong, a stick of butter and some salt goes a long way. But, if you want to amp up your summer veggie game, you’ve got to try one of these toppings for corn.
I love that it elevates the simple vegetable to a ‘company’s coming’ side but it’s simple enough that you can serve it any old night of the week.
You can cook your corn in the microwave, on the stove-top or in the oven but my favorite way to serve this is with grilled corn on the cob.
Simply, push back the husks and grill for 10 minutes on a 450 degree barbecue. I turn them about half-way through. Each of these recipes will work for 4-6 cobs of corn.
My 3 Favorite Toppings for Corn on the Cob
#1 Mexican Style Corn on the Cob
Ingredients
- 2 teaspoons chili powder
- 1/4 cup cotija cheese, crumbled
- 1/4 cup cilantro, chopped
- juice of one lime
Instructions
Rub your grilled corn with a pat of butter so the ingredients stick better. Sprinkle each listed ingredient over the corn.
#2 Hoisin Sesame Corn on the Cob
Ingredients
- 1/4 cup hoisin sauce
- 1/4 cup honey
- 2 Tablespoons soy sauce
- 1/2 teaspoon chili flakes
- juice of one lime
- 2 green onions, chopped
- 2 teaspoons sesame seeds
Instructions
Whisk the ingredients until smooth. Pour the sauce over grilled corn. Top with onions and sesame seeds.
#3 Parmesan Pesto Corn on the Cob
Ingredients
- 1/4 cup chopped basil
- 1/4 cup parmesan cheese blend, shredded
- 1/4 cup pine nuts
- 2 Tablespoons olive oil
- 1 teaspoon salt
Instructions
Chop all the ingredients together and pour the olive oil in to mix. Once thoroughly combined, drizzle over the grilled corn.
