One of my favorite recipes over the hot summer months when no one wants to cook is this Fiesta Dip.
It comes together in 15 minutes, tastes amazing and doubles as a side dish.
I’ve become known for this recipe and I’m not giving up the secret that it’s so easy to make! Most days I have the ingredients on hand, so I can serve it with grilled chicken for dinner any night of the week.
When we’re headed to a potluck or get-together, I serve it as a dip and never go home with leftovers. My kids also love it tucked in the middle of a quesadilla.
This would be perfect for Fourth of July. The colors are festive and it’s so refreshing!
Fiesta Dip Recipe
Ingredients:
- 1 can black beans
- 1 can whole corn
- 1 tomato, diced
- 1/4 cup onion, diced
- 1 avocado, cubed
- 1/4 cup cilantro, chopped
- juice of 2 limes
- 2 Tablespoons olive oil
- 2 teaspoons salt
Super Simple Instructions:
Mix everything together in a large bowl.
Chill for one hour.
Serve with chips or as a side dish.
