I love celebrating the holidays with my kids - they have such a knack for getting excited about each and every one. But that doesn't mean I want to stay up all night frosting cupcakes! Simple but special treats that take under 5 minutes to prepare are much more up my alley. Here's Janssen with a great one... Last year, I made some of that rainbow jello that's floating around on the Internet to celebrate St. Patrick's Day. It looked great, but it took hours to make (because it had to set between … [Read more...]
Healthy Kid Snack with Hidden Protein: Roasted Peas Three Ways
Peas are one of those under-estimated vegetables. You think they need to stay in the frozen section and only come out for a chicken pot pie. Peas actually have more protein than a whole egg or a tablespoon of peanut butter. Not only that, peas are a source of vitamin A, vitamin C, folate, thiamine (B1), iron and phosphorus.Getting peas into your diet can be a little challenging, so I decided to try my hand at roasting them as an alternative to steaming. Healthy Snacking: Simple Plantain Chips and Guacamole
I've mentioned here before that the family and I are making an attempt to eat healthier this year. (A cliche, I know, but I've got three kids aged 6 and under, I'm too tired to be original. Especially with the baby currently teething and up all hours of the night.) What I've noticed lately is that the hardest part, my downfall really, is snack time. Our whole family can eat the same breakfast day-in-and-day-out pretty much without complaint (steel cut oats and strawberries for me, … [Read more...]
Make Fruit Fun (and Spooky) with One Quick Trick
This might be the easiest food project I've ever created. It took mere minutes to give these pieces of fruit some personality. Here's what I did: Wash and dry the fruit. You want your surface to be relatively dry. Get some candy eyeballs. I used both small and large candy eyes from Wilton. These are especially easy to find during Halloween season, but I assume you can pick them up year-round. Apply your edible glue. We used peanut butter. You could also try any other nut butter, honey, … [Read more...]
