I love celebrating the holidays with my kids – they have such a knack for getting excited about each and every one. But that doesn’t mean I want to stay up all night frosting cupcakes!
Simple but special treats that take under 5 minutes to prepare are much more up my alley. Here’s Janssen with a great one…
Last year, I made some of that rainbow jello that’s floating around on the Internet to celebrate St. Patrick’s Day. It looked great, but it took hours to make (because it had to set between each layer).
My girls ate about two bites and then were done with it. A week later, I finally just threw it away.
This year for St. Patrick’s Day, I’m going with this rainbow drink instead. It looks just as pretty (or even prettier!) than the rainbow jello, and it takes all of five minutes to assemble.
Plus, my girls are fruit fiends, so there’s no question it’ll be scarfed down. Along with some shamrock cinnamon toast, it’s the perfect festive breakfast.
You’ll need:
- Clear glasses or bottles – you can buy glass milk bottles at craft stores or follow this tutorial for making your own from up-cycled Starbucks frappuccino bottles.
- Fruit in red (strawberries or raspberries), orange (mandarin oranges, clementines or mango), yellow (bananas, starfruit, pineapple), green (grapes, pears, apples), blue (blueberries), and purple (grapes)
- White grape juice or clear soda, like 7-Up or Sprite (probably want to stick to the juice for breakfast).
First, cut your fruit into bite-size pieces.
Starting with the purple fruit, layer your fruit in even amounts, finishing with your red fruit.
Slowly, pour the soda over the top of the fruit (I found it best to pour about an inch into each bottle, then circle back and do another inch in each one to keep it from overflowing). Serve and enjoy.
A few variations:
- Alternate layers of fruit with layers of sherbet (for example, swap out the green fruit for some lime sherbet or the strawberries for some raspberry sorbet).
- Instead of making individual cups of it, make one large glass pitcher. It looks gorgeous on the table.
- Skip the liquid and just give your child a fork or spoon to eat the fruit instead.
- For a fun activity, set out all the fruit and let your child assemble their own rainbow.
- Make this into an adult drink with the addition of some sparkling white wine.
